rainbow vegetables

It is a delicious and healthy dish in which various vegetables are presented in a colorful way. Here is the rainbow vegetables recipe you can make at home:


1 red pepper

1 yellow pepper

1 green pepper

1 purple eggplant

1 zucchini

1 carrot

1 onion

3 cloves of garlic

2 tablespoons of olive oil

Salt and pepper

1/2 bunch fresh thyme (or dried thyme)


Wash the peppers and eggplant and cut them into thin slices. Slice the zucchini and carrot the same way.

Finely chop the onion and crush the garlic.

Take the olive oil in the pan and heat it. Add the onion and garlic and fry.

Next, add the carrots and fry for a few minutes. Then add the other vegetables and mix.

Cook the vegetables for 10-15 minutes over medium heat, turning them regularly.

Season to taste with salt, pepper and thyme and mix.

To make the vegetables look colorful, take the rainbow vegetables you prepared on the serving plate.

You can serve rainbow vegetables alongside meat dishes, as a salad, or as a stand-alone meal. Enjoy your meal!
